  3. Nowhat is best to do it steam them in a steamer till soft set aside then
    add 1 tsp -2 tsp of cooking/salad oil into your wok heat it up and add the
    garlic and ginger until golden add your eggplant and seasoning sauce cook
    for a few more min traditionally the eggplant is ment 2b quite mushy and
    soft and because you steam them 1st u do not need 2 add extra water to
    finish the cooking but u can add more if the sauce becames to thick to
    fast. . oh and once the Eggplnt is steamed drain exess water

  4. steam it 1st :) it will help the cooking process and also all you then need
    it a few tsp of oil to cook the ginger and garlic
