How to Cook Mouth-Watering Homemade Cajun Chicken Salad

If you are looking for a spicy chicken recipe which is low in calories, you can try this scrumptious low fat, easy to make, Cajun style prepared chicken. Cajun style cooking originated in France and uses ingredients like bell peppers, lemons, onions, garlic, oregano, figs, celery, spring onions and Tabasco and Cayenne peppers. This preparation does not utilize mayonnaise and thus can be a fat free healthy alternative.

To make this spicy mouth watering delicacy you will need 2 skinless chicken breasts, 1 crushed garlic clove, 8 ounces or 200 gm of fresh potatoes, 3 finely sliced spring onions, 2 ounces or 50 gm of mixed salad leaves and a tablespoon of vegetable oil. For the seasoning you’ll need half a tablespoon of chili powder, a tablespoon of paprika, a table spoon of dried oregano, half a table spoon of all spices and salt and pepper to taste. For the salad dressing you will require two tablespoons of extra virgin olive oil, half a tablespoon of sugar, salt and pepper to taste, a tablespoon of cider vinegar and a dash of paprika. You can purchase all the necessary ingredients at any local store with ease. Now that you have noted down all the necessary ingredients, lets start with preparing the chicken.

Start with marinating the chicken breasts with a mixture of chili powder, paprika, all spices, oregano, crushed garlic and vegetable oil. Put the marinated chicken aside for some time so that it soaks up all the spices. Preheat your oven to a temperature of 190°C or 375°F. Put the marinated chicken on a baking dish and cook it for about 20 minutes till it is nicely done. Once it is cooked well, take it out from the oven and let it cool. Cut the chicken into medium slices and put it aside. Next wash the potatoes very well. Always remember maintaining hygiene while cooking because it is as important as cooking a dish well. Boil a pot of water and add some salt to it. Put the cleaned potatoes in the salted water and cook till they are nicely done. Once cooked slice the potatoes into bite sized thick portions after draining the excess water.

After you are done with cooking the chicken breasts and boiling the potatoes, start with making the salad dressing. Pour 2 tablespoon of extra virgin olive oil into a small bowl along with half a tablespoon of sugar, a table spoon of cider, half a tablespoon of all spices, salt and pepper and give it a good stir till the ingredients are blended well. Arrange the mixed salad leaves onto a plate to make a base for the dish. Put the boiled potatoes on top and pour the dressing over the bed of salad leaves and potatoes. Next place the roasted chicken slices and sprinkle the chopped spring onion on top. For the best results, serve the dish when it is steaming hot along with bread on the side.
