  13. I made this the other day and it came out absolutely gorgeous and
    delicious. The only thing is I only used one can instead of 2 because I
    didn’t want it to be too “pumkiny” and I thought it came out great.?

  15. What is the point of cooking this in a water bath and why do we have to let
    the dish cool at room temperature before putting it in the refrigerator?
    Isn’t it better to bring the temperature down as quickly as possible to
    keep the bacteria from multiplying out of control? I do agree that warm
    food should not be covered and put in the refrigerator though because the
    contents will remain insultated from the cold air in the refrigerator.?

  17. @kruffcia, yes. that’s what “pumpkin in a can” is. but u have to add about
    5 spices for that flavor, or it’ll be a bland flavor?

  21. I saw on your site, Chef John, that you didn’t care for the way the crust
    came out because it was a little gummy. You think that could have been
    caused by the flour you put in it and then the wet cheesecake mixture on
    top? Idk if I should skip it or not because Im going to attempt to make
    this… like today. Lol?
